Introduction

Ingredients:

  • 1 cup dried green chickpeas, soaked overnight
  • 1 tablespoon coconut oil, divided
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 2 tablespoons Thai green curry paste
  • 1 (14-ounce) can full-fat coconut milk
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions:

  1. Drain and rinse the green chickpeas.
  2. Heat 1 tablespoon of coconut oil in a large pot or Dutch oven over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic, ginger, and green curry paste and cook for 30 seconds more, until fragrant.
  3. Add the drained chickpeas, coconut milk, diced tomatoes, and salt and pepper to taste. Bring to a simmer, then reduce heat and cook for 20-25 minutes, or until the chickpeas are tender and the sauce has thickened.
  4. Taste and adjust seasonings as desired.
  5. Serve hot over rice or naan, garnished with chopped cilantro.
